Lycopene in tomatoes is good for the body

Lycopene in tomatoes is good for the body

Red in your eyes

A recent German study showed that surface-enhanced Raman spectroscopy can better study carotenoids and trace elements in foods compared to HPLC.

Does antioxidants really benefit human health? This debate has persisted, especially since people believe that following the highly pigmented dietary supplement elements in fruits and vegetables can have a positive effect on the human body. Tomatoes are rich in lycopene which contains a large amount of red pigments. It is believed that this compound has overall beneficial effects on the human body. In particular, eating large amounts of tomatoes can prevent the occurrence of prostate cancer.

Researchers from the University of Jena, Germany, published an article in Analyst magazine that helped us make up for our knowledge about lycopene and other carotenoids. Although we know much about lycopene and beta-carotene, little is known about these compounds in the plant phase. Therefore, they used surface-enhanced Raman spectroscopy (SERS) to find the differences in carotenoids among these plants.

About intake

The research team built a simulation matrix that simply mixed two specific ratios of carotenoids, and then used electron beam exposure to the SERS active substrate and a 488-nanometer excitation source for sample exploration. They extracted carotenoids from real tomato plants and measured them, and then used principal component analysis and partial least-squares regression to perform statistical analysis on the data. They compared the samples obtained using the SERS method with those obtained by HPLC measurements. Most tomato samples found consistency between the results obtained by HPLC and SERS.

The reason why this technology is important is because although scientists now know more than 600 known carotenoids, only 50% of them are found in people’s daily diets, and only 50% of them are A very small proportion of carotenoids can be detected in human plasma. This is what we usually refer to as alpha and beta carotene, beta cryptoxanthin, lycopene, lutein, and zeaxanthin. If these compounds are really beneficial to the human body, then we seem to really lack the intake of these compounds.

Through metabolic activity, some carotenoids are vitamin A-producing vitamins, but some carotenoids have their own oxygen and free radical scavenging properties. If vitamins from fish oil, animal liver, and egg foods don't always meet our needs for such vitamins, then our findings will be very important. Lycopene itself, 5 or 6 carotenoids are usually detectable in plasma, and they are the most effective neutralizing reactive oxygen species. During the spread of cancer, neutralizing reactive oxygen species can effectively organize or reduce the spread of cancer cells. The adverse effects of smoking and drinking on the body are said to be caused by excessive intake of carotenoids.

Let us please SERS technology

Therefore, from a healthy diet, we must maintain a balanced diet. In order to achieve this balance, we must have detailed information on the ingredients and quality of the food we eat. The research team pointed out that HPLC is a "gold standard" analytical technique for measuring the contents of foods. However, HPLC technology is not only slow and expensive, but SERS technology can provide the advantage of distinguishing carotenoids in real-world samples. The use of HPLC technology and SERS technology to achieve a good agreement between the test results of different maturity of the tomato, which also provided the foundation for the further development of SERS technology.
